RStudio webinars are a great source for learning R and they archive all of them here (https://www.rstudio.com/resources/webinars/) and save all their materials, including all the code and data that were used, on GitHub, which is great but also makes it less of an exercise/course because all of the "answers" are there, but it's a valuable resource.
For SPSS Laerd Statistics is a great resource (https://statistics.laerd.com/). While they charge for more in depth manuals, their free manuals take you through assumptions, how to run different statistical tests in SPSS, and how to interpret the output so you don't really need to subscribe.
Youtube also has a free 8 part tutorial by RStatsInstitute that takes you through a basic introduction of SPSS up to running basic statistics like correlations and t-tests: https://www.youtube.com/channel/UCXLbK1bH-w1oklGm4dLYrHw
For students doing more complicated statistics like linear or stepwise regressions the SPSS tutorials website has good step by step instructions with screenshots and explanations: https://www.spss-tutorials.com/regression/
